Needed some dessert action tonight.
Lemon Blossoms
18 1/2 oz yellow cake mix
3 1/2 oz. package instant lemon pudding mix
4 large eggs
3/4 cup vegetable oil
1/4 cup water
1/4 cup lemon juice
Glaze:
4 cups confectioners' sugar
1/3 cup fresh lemon juice
zest of one lemon
3 tablespoons vegetable oil
3 tablespoons water
Spray mini muffin tins with cooking spray. Combine the cake mix, pudding mix, eggs, oil, water and lemon juice. Blend well until smooth, about 2 minutes. Fill each muffin tin half way. Bake at 350 for 10 minutes. Turn out onto tea towel to cool. To make the glaze, add confectioners' sugar, lemon juice, zest, oil and 3 tablespoons water. Mix until smooth.
With fingers, dip the mini cakes into the glaze, turning to coat the entire cake. Place on wire racks, with parchment paper underneath to catch any drips. Let the glaze set thoroughly, about 1 hour.
